Tofu and Kale Miso Pasta

Tofu, Kale, pasta, blender
This delicious and nutritious Japanese-inspired pasta dish combines the creaminess of tofu with the earthy flavors of kale and the umami richness of miso. It’s a perfect marriage of flavors and textures, and the best part is that it’s easy to prepare!
Ingredients
- 12 oz of pasta
- 1 block of firm tofu, drained and cubed
- 4 cups of kale, chopped
- 3 tbsp of white miso paste
- 1/4 cup of water
- Salt and pepper to taste
- Olive oil for cooking
Instructions
- Cook the pasta according to the package instructions. Drain and set aside.
- In a blender, combine the tofu, white miso paste, and water. Blend until smooth and creamy.
- In a large skillet, heat a drizzle of olive oil over medium heat. Add the chopped kale and sauté until wilted.
- Add the blended tofu mixture to the skillet with the kale. Stir and cook for a few minutes until heated through.
- Add the cooked pasta to the skillet and toss to coat the pasta with the tofu and kale mixture.
- Season with salt and pepper to taste.
- Serve hot and enjoy this unique and flavorful Japanese pasta dish!
