Welcome to another quick and easy recipe! Today, I’ll be showing you how to make a delicious Tomato and Cheese Rice dish that is perfect for feeding a group of four.   • 2 cups of rice
  • 4 medium-sized tomatoes
  • 1 cup of shredded cheese (cheddar or mozzarella)
  • Salt, to taste
  • Pepper, to taste


  1. Start by cooking the rice. In a medium-sized saucepan, bring 4 cups of water to a boil. Add in the rice and a pinch of salt, then reduce the heat to low. Cover the saucepan and simmer for about 15-20 minutes, or until the rice is cooked and fluffy.
  2. While the rice is cooking, prepare the tomatoes. Wash them thoroughly and dice them into small pieces.
  3. Once the rice is cooked, transfer it to a large mixing bowl. Add in the diced tomatoes and shredded cheese. Mix everything together gently until the cheese starts to melt and coat the rice evenly. Season with salt and pepper to taste.
  4. Now, heat a large skillet over medium heat and add a small amount of oil. Once the skillet is hot, transfer the rice mixture into it. Spread it out evenly and press it down gently with a spatula. Cook for about 5 minutes, until the bottom becomes crispy and golden.
  5. Carefully flip the rice mixture over using a spatula or a large plate. Cook for an additional 5 minutes, until the other side also becomes crispy and golden.
  6. Remove the skillet from heat and let the Tomato and Cheese Rice cool for a few minutes before serving.
