Ingredients
- 200g silken tofu
 - 100g chorizo, diced
 - 2 large eggs
 - 150g pastry flour
 - 50g unsalted butter, softened
 - 1 tablespoon black truffle, finely grated
 - Salt and pepper to taste
 - Fresh herbs (optional, for garnish)

Instructions
- Prepare the Pastry: In a mixing bowl, combine the pastry flour and softened butter. Mix until it resembles coarse crumbs. Add a pinch of salt, then gradually add cold water, kneading until a smooth dough forms. Wrap in cling film and refrigerate for 30 minutes.
 - Cook the Chorizo: In a skillet over medium heat, add the diced chorizo. Cook until crispy and the oil has rendered, about 5-7 minutes. Remove from heat and set aside.
 - Make the Filling: In a blender or food processor, combine the silken tofu, eggs, grated black truffle, salt, and pepper. Blend until smooth and creamy.
 - Preheat the Oven: Preheat your oven to 180°C (350°F).
 - Roll Out the Pastry: On a floured surface, roll out the chilled pastry dough to fit a tart pan. Press it into the pan and trim any excess.
 - Assemble the Tart: Spread the crispy chorizo evenly over the pastry base. Pour the silken tofu filling over the chorizo, smoothing the top with a spatula.
 - Bake: Place the tart in the preheated oven and bake for 30-35 minutes or until the filling is set and the top is lightly golden.
 - Garnish and Serve: Allow the tart to cool for a few minutes before slicing. Garnish with fresh herbs if desired and serve warm or at room temperature.
