Ube and Kimchi Pork Stir-Fry

Ingredients
- 1 cup ube, peeled and diced
- 2 tablespoons butter
- 1 cup kimchi, roughly chopped
- 2 tablespoons olive oil
- 1 large carrot, julienned
- 2 cups cabbage, shredded
- 1 pound pork, thinly sliced (pork shoulder or tenderloin works well)
- 1/2 cup ham, diced
Instructions
- Prepare the Ube: In a pot, bring water to a boil. Add the diced ube and cook for about 10-15 minutes until tender. Drain and set aside.
