This delightful Ube Ice Cream Bake combines the unique, earthy sweetness of ube (purple yam) with the creamy, cool texture of ice cream, creating a dessert that's both visually stunning and delicious. Perfect for impressing guests or treating your family to something special!
Ingredients
- 1 cup ube halaya (ube jam)
- 1 cup all-purpose flour
- 1/2 cup granulated sugar
- 1/2 cup unsalted butter, melted
- 1/2 cup coconut milk
- 1 tsp vanilla extract
- 1 tsp baking powder
- 1/4 tsp salt
- 2 eggs
- 4 scoops of vanilla ice cream (1 scoop per serving)
- Optional toppings: toasted coconut flakes, crushed nuts, or fresh fruit
Instructions
- Preheat your oven to 350°F (175°C). Grease an 8x8-inch baking dish or line it with parchment paper.
- In a large mixing bowl, combine the melted butter and granulated sugar. Mix until well combined. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
- In a separate bowl, whisk together the all-purpose flour, baking powder, and salt. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
- Fold in the ube halaya and coconut milk into the batter until fully incorporated. The batter should have a smooth, even purple color.
- Pour the batter into the prepared baking dish and spread it evenly. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean. Allow it to cool completely on a wire rack.
- Once the ube bake has cooled, cut it into 4 equal pieces. Place each piece on a serving plate and top with a scoop of vanilla ice cream. Add optional toppings like toasted coconut flakes, crushed nuts, or fresh fruit if desired.
This Ube Ice Cream Bake is a delightful fusion of flavors and textures. The warm, slightly chewy ube bake pairs perfectly with the cold, creamy ice cream, making it a hit at any gathering. Enjoy this unique dessert with friends and family!
