Vegan Air-Fried Fennel and Radish Salad
What Started it all:
Fennel bulb, Radish, canned fish (tuna, sardines), air fryer
Preheat the air fryer to 375°F.
Ingredients
- 2 fennel bulbs
- 1 bunch of radishes
- 1 can of chickpeas (instead of fish for a vegan option)
- Cooking spray for the air fryer
Instructions
- Preheat the air fryer to 375°F.
- Trim the fennel bulbs and cut them into thin slices. Place them in a bowl.
- Wash and slice the radishes, then add them to the bowl with the fennel.
- Rinse and drain the chickpeas, then add them to the bowl.
- Lightly spray the fennel, radish, and chickpeas with cooking spray and toss to coat them evenly.
- Transfer the coated vegetables and chickpeas to the preheated air fryer basket.
- Air fry for 10-12 minutes, shaking the basket halfway through, until the vegetables and chickpeas are golden and crisp.
- Remove from the air fryer and let them cool slightly.
- Serve the air-fried fennel, radish, and chickpeas salad as a delicious vegan dish for 4 people.
