This vibrant and nutritious dish combines the earthy flavors of beets and the sweetness of pumpkin, enhanced by the chewiness of dried fruits. Cooking sous vide ensures that every bite is perfectly tender and infused with flavor. Perfect for a cozy dinner with friends or family!
Ingredients
- 2 medium beets, peeled and chopped
- 1 small pumpkin, peeled, seeded, and cubed
- 1/2 cup raisins
- 1/2 cup dried apricots, chopped
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 teaspoon cinnamon
- 1 teaspoon nutmeg
- Fresh herbs for garnish (such as parsley or mint)
Instructions
- Preheat your sous vide water bath to 185°F (85°C).
- In a large bowl, combine the chopped beets and pumpkin. Drizzle with olive oil, then sprinkle with salt, black pepper, cinnamon, and nutmeg. Toss until everything is well coated.
- Divide the beet and pumpkin mixture evenly into two vacuum-seal bags. Add the raisins and chopped apricots to each bag.
- Vacuum seal the bags tightly, ensuring there is no air left inside. If you don't have a vacuum sealer, you can use zip-top bags and the water displacement method to remove excess air.
- Submerge the bags in the preheated water bath and cook for 1.5 to 2 hours, allowing the flavors to meld beautifully.
- After the cooking time is complete, carefully remove the bags from the water bath. Open the bags and transfer the contents to a serving dish. Garnish with fresh herbs for a pop of color.
- Serve warm, and enjoy your delicious vegan beet and pumpkin sous vide delight!
