Ingredients

  • 4 medium-sized beets
  • 1 teaspoon salt
  • Water

Instructions

  1. Wash and peel the beets, then chop them into small pieces.
  2. Place the chopped beets into the pressure cooker.
  3. Add enough water to cover the beets.
  4. Sprinkle salt over the beets and water.
  5. Close the pressure cooker and cook the beets on high pressure for 10 minutes.
  6. Allow the pressure to release naturally before opening the cooker.
  7. Carefully transfer the cooked beets and liquid to a blender.
  8. Blend until smooth and creamy.
  9. If the soup is too thick, add a little more water and blend again.
  10. Taste and adjust the seasoning if needed.
  11. Serve the soup hot, garnished with a drizzle of olive oil or a dollop of vegan yogurt, if desired.
