This vibrant and flavorful beet soup is a perfect dish for a cozy dinner for four. Using the simple ingredients of beet and salt, cooked to perfection in a pressure cooker, this recipe is both delicious and easy to make.
Ingredients
- 4 medium-sized beets
- 1 teaspoon salt
- Water
Instructions
- Wash and peel the beets, then chop them into small pieces.
- Place the chopped beets into the pressure cooker.
- Add enough water to cover the beets.
- Sprinkle salt over the beets and water.
- Close the pressure cooker and cook the beets on high pressure for 10 minutes.
- Allow the pressure to release naturally before opening the cooker.
- Carefully transfer the cooked beets and liquid to a blender.
- Blend until smooth and creamy.
- If the soup is too thick, add a little more water and blend again.
- Taste and adjust the seasoning if needed.
- Serve the soup hot, garnished with a drizzle of olive oil or a dollop of vegan yogurt, if desired.
