This vegan recipe combines the goodness of carrots and spinach with the savory flavor of soy sauce, creating a quick and easy dish that’s perfect for a healthy, flavorful meal.


  • 4 large carrots, julienned
  • 4 cups of fresh spinach
  • 2 tablespoons of soy sauce
  • 1 tablespoon of oil


  1. Place the julienned carrots in a microwave-safe dish and cover with a damp paper towel. Microwave on high for 3-4 minutes, or until the carrots are tender.
  2. In a large skillet or wok, heat the oil over medium-high heat.
  3. Add the microwaved carrots and fresh spinach to the skillet and sauté for 2-3 minutes, or until the spinach is wilted.
  4. Drizzle the soy sauce over the carrot and spinach mixture, and toss to combine.
