Vegan Carrot and Spinach Stir-Fry

This vegan recipe combines the goodness of carrots and spinach with the savory flavor of soy sauce, creating a quick and easy dish that’s perfect for a healthy, flavorful meal.
Ingredients
- 4 large carrots, julienned
- 4 cups of fresh spinach
- 2 tablespoons of soy sauce
- 1 tablespoon of oil
Instructions
- Place the julienned carrots in a microwave-safe dish and cover with a damp paper towel. Microwave on high for 3-4 minutes, or until the carrots are tender.
- In a large skillet or wok, heat the oil over medium-high heat.
- Add the microwaved carrots and fresh spinach to the skillet and sauté for 2-3 minutes, or until the spinach is wilted.
- Drizzle the soy sauce over the carrot and spinach mixture, and toss to combine.
- Continue to cook for another 1-2 minutes, allowing the flavors to meld together.
- Remove from heat and serve hot.
