Vegan Garlic Oat Rice

This vegan recipe combines the nutty flavor of oats with the crisp freshness of lettuce, all infused with the aromatic essence of garlic. It’s a simple and wholesome dish that can be effortlessly prepared in a rice cooker for a delightful meal.

Ingredients

  • 2 cloves of garlic, minced
  • 4 cups of lettuce, chopped
  • 1 cup of oats
  • 2 cups of water
  • Salt and pepper to taste

Instructions

  1. Rinse the oats thoroughly and drain excess water.
  2. Place the oats in the rice cooker along with the minced garlic and water.
  3. Close the rice cooker and set it to cook for about 15 minutes or until the oats are tender.
  4. Once the oats are cooked, fluff them with a fork and season with salt and pepper.
  5. Add the chopped lettuce to the cooked oats and gently mix it in.
  6. Allow the residual heat to slightly wilt the lettuce.
  7. Serve the vegan garlic oat rice in bowls and garnish with additional chopped lettuce if desired.
