Vegan Garlic Oat Rice

This vegan recipe combines the nutty flavor of oats with the crisp freshness of lettuce, all infused with the aromatic essence of garlic. It’s a simple and wholesome dish that can be effortlessly prepared in a rice cooker for a delightful meal.
Ingredients
- 2 cloves of garlic, minced
- 4 cups of lettuce, chopped
- 1 cup of oats
- 2 cups of water
- Salt and pepper to taste
Instructions
- Rinse the oats thoroughly and drain excess water.
- Place the oats in the rice cooker along with the minced garlic and water.
- Close the rice cooker and set it to cook for about 15 minutes or until the oats are tender.
- Once the oats are cooked, fluff them with a fork and season with salt and pepper.
- Add the chopped lettuce to the cooked oats and gently mix it in.
- Allow the residual heat to slightly wilt the lettuce.
- Serve the vegan garlic oat rice in bowls and garnish with additional chopped lettuce if desired.
