Vegan Potato and Onion Stew

Ingredients
- 2 onions
- 4 potatoes
- Vegan canned fish alternative (chickpeas, jackfruit, or tofu)
- Olive oil
- Salt
- Pepper
- Vegetable broth
Instructions
- Dice the onions and potatoes.
- Heat some olive oil in a pot over medium heat.
- Add the diced onions and sauté until they are soft and translucent.
- Add the diced potatoes to the pot and cook for a few minutes.
- Pour in enough vegetable broth to cover the potatoes and onions.
