Ingredients
- 1 block of vegan spam (such as seitan or tofu)
- 2 cups mixed vegetables (bell peppers, broccoli, carrots, snap peas)
- 2 tablespoons soy sauce (or tamari for gluten-free)
- 1 tablespoon sesame oil
- 2 cloves garlic, minced
- 1 teaspoon ginger, grated
- 1 tablespoon cornstarch (optional, for thickening)
- 2 green onions, sliced (for garnish)
- Cooked rice or noodles (for serving)
Instructions
- Prepare the Vegan Spam: Cut the vegan spam into bite-sized cubes or slices.
- Heat the Pan: In a large skillet or wok, heat the sesame oil over medium-high heat.
- Cook the Spam: Add the vegan spam to the pan and sauté for about 5-7 minutes until golden brown on all sides. Remove from the pan and set aside.
- Sauté the Vegetables: In the same pan, add the minced garlic and grated ginger, stirring for about 30 seconds until fragrant. Add the mixed vegetables and stir-fry for 4-5 minutes until they are tender but still crisp.
- Combine Ingredients: Return the cooked vegan spam to the pan with the vegetables.
- Add Sauce: Pour in the soy sauce and mix well. If using cornstarch, dissolve it in a little water and add it now to thicken the sauce. Cook for an additional 2-3 minutes.
- Serve: Remove from heat and serve the stir-fry over cooked rice or noodles. Garnish with sliced green onions.
