Instructions
- Preheat your oven to 180°C (350°F).
- In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
- Add the sliced zucchini, diced bell pepper, and sliced mushrooms to the skillet. Cook for about 5-7 minutes until the vegetables are tender. Stir in the chopped spinach and cook for an additional 2 minutes. Season with salt and pepper to taste.
- In a baking dish, spread a thin layer of diced tomatoes on the bottom.
- Place three lasagne sheets on top of the tomatoes, followed by half of the sautéed vegetable mixture and half of the crumbled goat cheese.
- Repeat the layers: add another three lasagne sheets, the remaining vegetables, and the remaining goat cheese.
- Top with the last three lasagne sheets and pour the remaining diced tomatoes over the top. You can sprinkle a little extra goat cheese if desired.
