  • 1 pound fresh spinach, chopped
  • 1 pound green beans, trimmed
  • 1 cup strong brewed coffee
  • 1 large skillet


  1. Preheat the skillet over medium-high heat. Add the green beans and cook until tender.
  2. Add the chopped spinach to the skillet and cook until wilted.
  3. Whisk together brewed coffee and olive oil. Pour over spinach and green beans. Stir well.
  4. Simmer for 5-7 minutes. Serve hot, garnished with parsley or chives.
