Vegetarian Delight

What Started it all:
Spinach, Green bean, coffee, skillet

Ingredients
- 1 pound fresh spinach, chopped
- 1 pound green beans, trimmed
- 1 cup strong brewed coffee
- 1 large skillet
Instructions
- Preheat the skillet over medium-high heat. Add the green beans and cook until tender.
- Add the chopped spinach to the skillet and cook until wilted.
- Whisk together brewed coffee and olive oil. Pour over spinach and green beans. Stir well.
- Simmer for 5-7 minutes. Serve hot, garnished with parsley or chives.
