  • 200g green beans, trimmed and halved
  • 200g lentils, cooked

  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)


  1. Boil the eggs in a pot of water for about 8 minutes for hard-boiled. Once done, transfer them to a bowl of ice water to cool. Peel and set aside.
  2. If you haven't cooked your lentils yet, do it now. Rinse them under cold water and cook them in a pot with plenty of water until tender, about 20-25 minutes. Drain and set aside.
  3. Bring a pot of salted water to a boil. Add the green beans and cook for 2-3 minutes until crisp-tender. Drain and plunge into ice water to stop the cooking process. Drain again and set aside.
  4. Heat the wok over medium-high heat. Add the olive oil, then toss in the cumin seeds and let them sizzle for a few seconds.
  5. Add the chopped onion and garlic. Stir-fry until the onion becomes translucent and the garlic is fragrant. Don’t burn it, for crying out loud!
  6. Add the blanched green beans to the wok and toss them around for a couple of minutes.
  7. Add the cooked lentils and stir until everything is well combined and heated through. Season with salt and pepper to taste.
  8. Divide the lentil and green bean mixture among four plates.
  9. Halve the boiled eggs and place them on top of each serving.
  10. Garnish with freshly chopped parsley.
