Yellow Trumpet and Egg Yolk Delight

Ingredients
- 200g yellow trumpet mushrooms, cleaned and sliced
- 4 egg yolks
- 100g roasted corn kernels
- 1 bunch ciboulette (chives), finely chopped
- 50g brown butter
- 2 shallots, finely diced
- 100ml sherry wine
- Salt and pepper, to taste
Instructions
- Clean and slice the yellow trumpet mushrooms, dice the shallots, and finely chop the chives. Set aside.
- In a large skillet, melt the brown butter over medium heat. Add the diced shallots and sauté until they become translucent (about 3-4 minutes).
- Add the sliced yellow trumpet mushrooms to the skillet. Cook for about 5-7 minutes, stirring occasionally, until they are tender and slightly golden.
- Pour in the sherry wine, scraping up any browned bits from the bottom of the skillet. Allow the mixture to simmer for another 2-3 minutes until the wine has reduced slightly.
- Add the roasted corn kernels to the skillet, stir well to combine, and season with salt and pepper to taste. Cook for an additional 2 minutes.
- In a small bowl, gently whisk the egg yolks. You can choose to either serve them raw (for a luxurious touch) or lightly cook them in a separate pan with a little brown butter until just set.
- Divide the mushroom mixture among four plates. If using raw egg yolks, create a small well in the center of each plate and place a yolk in the well. If lightly cooked, place the yolk on top of the mushroom mixture.
- Sprinkle the chopped chives over each plate for a fresh finish. Serve immediately, and enjoy your culinary creation!
