Ingredients
- 2 cups of quinoa
- 4 cups of vegetable broth
- 1 cup of cherry tomatoes, halved
- 1 cup of bell peppers, diced (any color)
- 1 cup of zucchini, diced
- 1 cup of fresh spinach
- 1/2 cup of feta cheese, crumbled
- 1/4 cup of olive oil
- 2 cloves of garlic, minced
- 1 teaspoon of dried oregano
- Salt and pepper to taste
- Fresh basil for garnish
Instructions
- Rinse the quinoa under cold water in a fine mesh sieve until the water runs clear.
- In a medium saucepan, bring the vegetable broth to a boil. Add the rinsed quinoa, reduce heat to low, cover, and simmer for about 15 minutes or until the quinoa is fluffy and the liquid is absorbed.
- While the quinoa is cooking, heat the olive oil in a large skillet over medium heat. Add the minced garlic and sauté for 1 minute until fragrant.
- Add the diced bell peppers and zucchini to the skillet. Sauté for about 5-7 minutes until they are tender.
- Stir in the halved cherry tomatoes and fresh spinach. Cook for an additional 2-3 minutes until the spinach wilts.
- Once the quinoa is cooked, fluff it with a fork and add it to the skillet with the sautéed vegetables. Mix well to combine.
- Season with dried oregano, salt, and pepper to taste. Gently fold in the crumbled feta cheese.
- Serve warm, garnished with fresh basil.
